My wife and I will be in Japan for a total of 11 days (arriving at Kansai Intl Airport on 29 May and departing at the same airport on 8 June )
Here's our itinerary:
29 May - Kansai Airport to apartment (Shin-Osaka Station)
29 - 31 May - Osaka, Kobe, Nara, Kyoto
1-2 June - Shin-Osaka to Odawara (Mt. Fuji - Hakone)
2-4 June - Odawara to Tokyo (Shinjuku)
4 June - Tokyo to Shin-Osaka
4-8 June - Osaka ( Universal Studios Japan) and other nearby cities
8 June - Shin-Osaka to Kansai Airport
Which is the best (most economical) rail pass to buy - 7 or 14 days? If we buy the 14 days rail pass and only used 11 days, are the unused days refundable?

It seems that for your itinerary you would have to go for a 14 day rail pass. Unless you plan on staying in one city for 4 days, and not having to use the JR Pass for any journeys. Once the JR Pass exchanged, it is non refundable. But in any case, as you are travelling a lot, the JR Pass will be a great saving!
