Looking at getting 7 day rail pass was seeing if all our trips would be covered with the pass.
We land on the 26th feb at Narita Airport
Catch train from Narita-Shinjuku.
A day Trip to Disneyland.
Possibly a day trip to Mt Fuji.
on the 4th march travel to Hakuba (best option required), we would like to get the bullet train (shinkansen).
I read that catch a train from shinjuku to tokyo station. From there get the shinkansen to nagano, then could get the alpico bus to hakuba from there.

Bullet trains, and most of the travel you described, are covered by your Japan Rail Pass.
There are two points to note:
- The last leg of train travel to Mt. Fuji is only covered by the Fujikyu Railways, which is not covered by a JR Pass. That part of the journey is ¥1000 extra per person each way.
- There may be private transportation owned by Disney that is not covered by a rail pass, but it'll get you pretty close!
