Will an all JR Pass for 7 days work for our itinerary--March 3/16-3/24/18:
3/16--Arr. Tokyo around 2:00 p.m.
3/17--Leave for Osaka
3/18--Osaka
3/19--Leave for Hiroshima
3/20--Hiroshima/Miyajima
3/21--Return to Tokyo (6 hrs. on Shinkansen)
3/22--Tokyo
3/23--Tokyo
3/24--Leave Tokyo around 11:00 a.m.
Also, does JR Pass cover Narita Express to/from Tokyo?
Will the 7 day pass pay off for this Itinerary or should I get a different pass.

If you want a cheap way to/from Narita, there is the 1000 yen bus.

Also, how do I get to Dotonbori, Shinsaibashi and Namba from Uehommachi? Would it be worthwhile getting a local subway/train pass in Osaka? Which one and how much?
Sure, you could. It's around 15 minutes on foot. I don't know about how much baggage you'll be dragging behind you though.
Dotonbori/Namba etc is just 2 stations from Tanimachi 9 Chome Stn nearby. Dotonbori is only really interesting in the evening, but you could spend several hours to see all the places you mention.
You might look at getting an Osaka Amazing Pass, but it only might pay off if you travel a lot and go to the places it gives discounts to.

We have 1/2 a day in Tokyo on 3/16--probably just explore the Shinjuku area around the hotel--Keio Plaza Hotel. We return to Tokyo on 3/21 on Shinkansen from Hiroshima--assume in the late afternoon. Leave Tokyo @ Narita Airport around 11: a.m. on 3/24. So, for travel around Tokyo from 3/21-3/24, would I be able to get around on my JR Pass or should I purchase a subway pass--24 hr, 48 hr. or 72 hr. Which areas would I have access to on JR Pass vs. subway pass? Would a subway pass give me a 1-way ride to Narita from downtown Shinjuku? How do I obtain a pass package? Thanks in advance!
I would use the JR Pass for at least one way to or from Narita, since the Narita Express train is quick and convenient, and would add to your savings. There are 1-3 day subway passes, as you can see here:

You can get some good savings from a 2-3 day pass. The one day subway pass is almost impossible to justify - you'd have to ride your behind off all day. You cannot take the subway to the airport - it's over 65 km away! The cheapest way is the 1000 yen bus as I mentioned.
I suggest you take it up with them directly. If you can phone them toll free, you can probably fix the issue faster.
