The following is our itinerary:
Flying into Kansai Airport
Train direct to hotel in Kyoto (stay 4 days)
Train to Matsumoto (stay 3 days)
Do Tateyama Kurobe Route
Tateyama (1 day)
Train to Kanazawa (stay 3 days)
Possibly taking car rental from Kanazawa for Shirakawago and Gokayama and returning car at Takayama
Takayama (stay 3 days)
Train to Nagoya (stay 2 days)
Fly out from Nagoya.
What kind of Pass should we be buying for the itinerary? Or is our itinerary too wide spread to make it worthwhile? We will be doing day trips during our stay. Not too sure if the JR pass would cover those.

Unfortunately given the length and pace of your plans, I can't see any JR Pass helping you. Some regional ones might help some if you are willing to re-order your destinations.
For getting from KIX and getting around Kansai, there is the Icoca & Haruka discount ticket:
